First meal to cook as a wife is very important. Whats is it important? Because all we’ve been doing for a week (if not a little more) is eating out! Dont get me wrong we’ve been eating amazing and I do mean amazing food this past week in New York City. We just couldnt believe food would get better and then it would! And we know we barely touched the amount of amazing food to be found in the city. So, see, there is much pressure on me here after all the lovely tastes and smells to have a homemade goodness. We both were in the mood for soup and after reading Kendra’s article about things to stock your kitchen with (which very timely we needed to do) I searched her sight for an easy soup recipe and came across the simple vegetable soup and gave it our own twist. By own twist I mean, whatever veggies sounded good at Trader Joes and I had already picked up, thats what we used. Heres what the recipe looked like:
2 cups of chopped up of each of these veggies: (so sad I didnt use my NEW magic bullet to do this! What was I thinking?! Thank you Geof)
zucchini
mushrooms
celery
carrots
onion
yukon potatoes
and toss in a can of diced tomatoes. Kendra is right, veggie soup really needs this.
We used four cups of veggie broth – no water. With the large amount of veggies I chopped up, we thought we might of needed to add a cup of water, but it was just perfect – just really chunky.
Kendra also suggests to saute your veggies and we agree. I threw in the onion when I was about half way chopping up all the veggies (making sure they were all about the same bite size pieces – this is important) with a tablespoon of butter. After tossing all the rest of the veggies (can of tomatoes last) we added more butter. We probably didnt need this much, but we used total, just shy of half a stick. So good though. Oh and listen to Kendra LOTS of pepper and salt! Key to this soup. We tossed in some chicken (Jason needed protein I could of lived without it) and wish we had cheese in the house to sprinkle on top. That simply is all it was missing – cheese.
The husband liked it. The wife had an easy and enjoyable time making it (which very little clean up and lots of left overs!). Winner for this newly wed couple for sure – thanks Kendra.
