Butterbeer:
1 pint of vanilla ice cream, softened
1/2 stick (4 tbsp) butter, room temperature
1/3 cup light brown sugar
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1 bottle (3 cups) sparkling apple cider
Allow ice cream to soften, about 30 minutes, and bring butter to room temperature, about 2 hours.
Cream together butter, sugar, and spices in large bowl. Add to ice cream and refreeze.
Heat sparkling cider in a pot until warm but still carbonated (at least 3 minutes). Fill each glass with a generous scoop of ice cream mixture and pour warmed cider over ice cream. It will foam like beer; hence the name.
Yield: 6 servings
“Nutrition” information (you don’t want to know, but here it is anyway!): 329 calories, 20 grams fat (12 g saturated, 55% fat calories) per 1/4-cup serving

As I sit in this cold, cold air conditioned library, that sounds absolutely delicious and yummy. I want some!
But 20 fat grams per 1/4 cup serving! Yikes! That may not fit in our attempts at healthy eating…
Maybe substitute ice cream with frozen yogurt? Or fat-free ice cream? Margerine instead of butter? I bet it wouldn’t taste as good, though.
